I am totally about to steal my sister's thunder.
On Saturday night, after a very salty meal of festive meats, I started fantasizing about eating a wonderful dessert. My mind settled upon a new recipe that my sister sent me for mini monkey breads. I am a big fan of monkey bread, so monkey bread in miniature form seemed appealing to my feminine side, I guess.
I hopped up and scanned the recipe to make sure I had all the ingredients. I didn't. NOOOOOOOOOOOOOO!!! I lacked corn syrup, which was surely an essential ingredient. I almost gave up. But then I thought of my amazing Southern Living cookbook and its handy-dandy substitution guide and found a very helpful substitution for corn syrup. Can you guess what it is?
HONEY. Are you kidding? Little balls of dough dipped in butter and HONEY and then rolled in cinnamon and brown suger? Um, YES, PLEASE. I went to work, and a little while later, the apartment was filled with the aroma of happiness, and we scarfed down our mini monkey breads like there was no tomorrow. So, sorry, corn syrup. Who needs you?
Here's the recipe, as originally written.
Mini Monkey Bread
Monkey Bread is a Rhodes family favorite. Try this fun and easy Mini Monkey Bread recipe out on your family. It's sure to become a favorite.

Bake Time: 15-20 min
Skill Level: Beginning
Servings: 12
12 Rhodes™ Dinner rolls, thawed but still cold
6 tablespoons butter, melted
2 tablespoons corn syrup
1/2 cup brown sugar
2 teaspoons cinnamon
Icing:1 cup powdered sugar
1 tablespoon butter, melted
1-2 tablespoons milk
1/2 teaspoon vanilla
Cut each dinner roll into 6 equal pieces. In a bowl, combine butter and corn syrup and stir until well mixed. In another bowl, combine sugar and cinnamon and mix well. Dip each roll piece in the butter mixture and then in the sugar mixture. Place 6 pieces in each well sprayed cup of a 12 cup muffin tin. Cover with sprayed plastic wrap and let double in size. Remove wrap and bake at 350°F 15-20 minutes. Cool 3-4 minutes before removing from pan. Combine icing ingredients and mix well. Drizzle over monkey breads if desired.
Note: This made about twice as much frosting as I ended up using, but if you really like frosting, then I guess that's your business.

Um, yum. I found these weird Chinese frozen breads at the store that kind of substitute for Rhodes rolls, and I am going to give this a whirl.
Also a little curious about the "very salty meal of festive meats." Who has festive meats? You, that's who.
